Yes the stock front brake disc is thinner than the 320 brake disc which I got for SM so i moved the whole wheel 1mm away with a thin spacer, I'll remove material from the brake caliper adapter eventually.
That does sound like a challenge. I would prefer to use the stock Stark phone to run it on, purely because the mount holds the phone so well onto the bike. The Varg app is aggressive, it won't even let me turn bluetooth off, just turns it straight back on.

Yea i did the same. Excel rims and haan hubs. Really happy with them. Did you space out the rear sprocket to avoid chain rub or did the wheel builder do that?

I went with 45 rear so I didn't have to break the chain for either 14 or 15 at the front. Im mostly running 14/45 cause i like 14 for MX, gives more clearance for any mud on the chain around the front sprocket.
I wouldn't go to 40 rear unless you plan on changing the rear sprocket chain guide...
