I have the same disc. I paid much less, under 200 euro. Stark is pretty good on their pricing mostly, but there is a clean misalignment here. Also, I've seen you say the stark SM wheels are a good price, and they are not too bad. But once you add up the cost of the tyres, tubes (or tubeless system), discs and drive, you're looking pretty close to what you can order from any custom wheel builder.

Stark rear brake disc: 79.90€ (You can swap it with the current you have)
Galfer 320mm Front rotor: 199€ (Stark one isn't compatible with the EX)
KTM or Motomaster 320mm adapter: 99€
Tyres: Obviously depends, i choose ContiAttack sm2: 283€ at my country
TOTAL: 1788€
Then we have a lot of options for the Custom Wheel Builders, i think the best ones can be HAAN with their EXCEL rims, Warp 9 and SMPRO. Falco and Bold are also there. Probably a million more and everybody has their favorite... i know
HAAN OPTION
Their custom builder on web doesnt say any price, if i search on Google for what comes up from other sellers who sell complete EXCEL wheels, the prices are usually around €1,500 with hubs, sprockets and discs, tires not included.
1.500€ + 283 contiattack = 1.783€
WARP 9 OPTION
I do a custom wheel with a total of 1.652$ or 1433€ without tyres and with shipping included. (attached below)
1433€ + 283 contiattack = 1716€
SMPRO OPTION
Only wheels: 1795€
Stark rear sprocket: 29.90€
Stark rear brake disc: 79.90€
Galfer 320mm Front rotor: 199€

It's difficult to choose an option, and unfortunately, it seems that the Stark front wheel isn't compatible with the EX, so putting together a supermoto setup is complicated for me right now. SMPRO is the most expensive but they are fucking beautiful, they let you choose a ton of colors and cerakote coating or anodised. You can try it here:
